Brown Sugar/Unrefined Sugar Popcorn (Vegan, Healthier Popcorn in 10 MINUTES)

I made POPCORN!

.

Uncaramelized

.

In 10 minutes. And yes, it includes caramelization time.

.

Of course I had to make it healthier. White sugar? PPPhhhffff… please use brown! Do yourself and your friends more good!

I always feel guilty serving people unhealthy stuff (bakes laden in butter and tons of white sugar) –hence these healthy recipes I made. And I will admit it. Its not easy. Butter and sugar simply makes anything taste good. No matter how much you put.

Even popcorn. But not THIS popcorn, which is absolutely delicious without any of those.

.

Its so beautiful! Watching those unattractive teeney weeney hard-assed corn kernels explode into gorgeous fellas made the highlight of my day. (on the other hand, since I’m studying, anything I’m doing besides that is a ‘highlight‘)

.

So I want you to enjoy it with me! Its SOO easy! And much cheaper than buying those from shops and carnivals (my mum absolutely hates the ‘c’ word. She thinks it makes us sound crass. But what the heck, I love ‘c’heap stuff! :D). Most importantly, HEALTHIER!

Popcorn.

Ingredients

  • 3 tbsp unpopped corn kernels
  • 1 tbsp olive oil
  • 1/2 tsp salt

.

Directions

In a deep and heavy pot (that comes with a heavy lid), pour in the oil and shake the pot till it forms an even surface on the pot. Spread the corn kernels in a single surface on the oil (you can sprinkle them into the pot than shake it to form the single surface). Sprinke on the salt.

Cover the pot with its lid. Heat over high heat. Popping will begin soon. Keep shaking when popping is vigorous to prevent burning. When popping slows down, turn off the heat and do not remove the lid. Wait for popping to stop completely before removing the lid and transferring to the popcorn to a large metal bowl.

.

Caramelization

Ingredients

1/4 cup brown sugar/ coconut sugar / Sucanat/ black sugar (Yes, all work!)

.

Directions

Over medium heat in a non-stick pan, add brown sugar/ coconut sugar/ Sucanat and stir till it dissolves completely. Then turn up the heat to high and stir till the syrup boils. Add in the popcorn and stir vigorously to get all the popcorn caramellised. When evenly mixed, remove the caramellised popcorn and transfer back into the metal bowl to cool.

Optional step: Sprinkle 2 tbsp cocoa powder and 1 tsp cinnamon and mix with popcorn.

Tell me: Do you ever feel guilty serving other unhealthy stuff like I do??

I always feel guilty. Its not a good feeling! 😦

++ Any more popcorn ideas for me? I have so much more to pop! (Bought about 500g!)

Thanks so much for submitting this to Wellness Weekend. It does look amazing! But I’m so sorry, brown sugar is actually refined sugar! It’s just white sugar with a little molasses added back in (in other words, believe it or not, it’s no healthier than white sugar). Totally my fault as I forgot to mention this on the post guidelines! I would love to keep the recipe as I think it’s terrific–would you be able to add an alternative such as Sucanat or coconut sugar so that the recipe would be consistent with the WW guidelines? Sorry for the confusion!

    1. qiting93 says:

Sure! Thanks Ricki! 😀 And double thanks for the info! I always thought brown sugar was healthy! I’ve had black sugar too (not sure whether that’s healthier?) which I though was healthy. Turns out I’m wrong! Now gotta get some Sucanat! 😀 Good thing coconut sugar is easy to find in Singapore!! 😀

      1. Ricki says:

Thanks so much for making the switch (and apologies again!). “Real” brown sugar (what is now called Sucanat) is healthier because it retains all the original molasses, vitamins and minerals from the sugar cane juice, but these days, brown sugar isn’t what it used to be, sadly. I’m so glad you can get those other sugars there–I LOVE coconut sugar and find it has a lovely flavor. I am soooooo making that popcorn! 🙂

I LOVE POPCORN. Oh my gosh this sounds so good. I like coating popcorn with peanut flour if you have that. It tastes so good that way!
I’m not too concerned with serving unhealthy things, as long as it’s made with quality ingredients. If it’s weird crazy ingredients lists, I kind of feel bad because I know I would never eat that myself.

    1. qiting93 says:

Oh PEANUT FLOUR!!! I need to get that real soon! Everyone keeps raving about it! 😀 Thanks for your suggestion, Tara! 😀

These popcorn look so much like those store bought ones — you know those in big transparent container about $12 each. I like making popcorn, however I always feel lazy to make the caramel sauce .. so I usually just spray mine with spam and add some seasoning to it. I kinda prefer salty ones 😉

    1. qiting93 says:

I like the salty ones too! But my family loves super-sweet popcorn so majority wins! 😀

  12. this looks AMAZING!!!!!
